To fashion a true Lord Bergamot, one begins with a higher class of Ceylons and Assams than used in traditional Earl Grey formulas. To these we add the perfume of oils squeezed from thick-skinned bergamot, a citrus fruit grown on small family plots in southern Italy. It's a process similar to pressing olives.
